Ubisoft is currently working on various projects Assassin's Creed-projects, including at the Codename RED, which is set to be the next big RPG adventure. Its release could take place as early as next year.
This is evident from a general inquiry to sponsoring partners (via) by Ubisoft, in which the Business Development and Brand Partnership Team is looking for suitable partners. It states:
“We are looking for sponsoring partners for Assassin's Creed Codename RED […] Would you like to be a partner of one of the biggest blockbusters in 204?”
The inquiry is currently about four months old, during which time the potential release plans may have changed, but it should still serve as a rough guideline. However, there has been no confirmation from Ubisoft so far.

What is Assassin's Creed Codename RED?
The Assassin's Creed-Project Codename RED is being developed by Ubisoft Quebec, the studio behind Assassin's Creed Odyssey and with Jonathan Dumont as Creative Director. Players can look forward to a long-awaited setting for a Assassin's Creed-Playing with joy: feudal Japan with all its shinobi fantasies.
In total, there are currently said to be 11 Assassin's Creed games are in development and will be released on various platforms in the coming years. The release of [the following] has already been announced. Codename RED next year is expected.

First up is the release of Assassin's Creed Mirage this October, which marks a return to the roots of the franchise.
I'm really excited; Japan is a perfect fit for AC. I just hope they manage a clean 60fps this time without tearing. To this day, I don't understand why AC Origins and Odyssey run more smoothly on PS5 backwards compatibility than a native PS5 game, even though the engine is the same and Odyssey even has a larger open world than Valhalla in one go.
